Donut Muffins



Is it a donut? Is it a muffin? Its an absolutely delicious combination of the two- oh yeah- and its filled with gooey jam!! How much better could this be?! I discovered this mouth-watering treat on one of my favorite cooking blogs, http://noblepig.com/. These are sure to go fast, so hide them under your bed so your roomies don't eat them!


Ingredients:
1 3/4 cup all purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg                       Topping
1/4 tsp ground cinnamon                    1/4 cup butter, melted
3/4 cup sugar                                    1/3 cup sugar
1/3 cup vegetable oil                         1 tsp cinnamon
1 egg, lightly beaten                           
3/4 cup milk
jam (of choice)

Things You Will Need
9 or 12 cup muffin pan
9 muffin cups

Directions
In a large bowl, combine the flour, baking powder, salt, nutmeg and cinnamon. Whisk these ingredients until well combined. Set aside.

In another bowl, combine the sugar, oil, egg and milk. Once combined, stir these ingredients into the dry ingredients, until lightly moistened. (Don't mix too much!)

This recipe makes only 9 servings, so you need at least a 9 cup muffin pan, but 12 works too, just leave 3 cups empty. Place 9 paper-lined cups into the pan, and fill them half full with mixture. The mixture can become kind of pasty, so be careful not to fill too high. Shake pan lightly or drop onto counter to level out mixture. 

Place one tsp of jam in the center of each muffin. I used seedless strawberry jam and it was delicious!

Cover each jam filled muffin with more batter, enough to completely cover the jam. Each cup should be 3/4 full. 

Bake muffins at 350° for 20-25 minutes, or until toothpick comes out clean. 
Place melted butter in a small bowl. In a separate bowl, combine sugar and cinnamon. Immediately after removing muffins from the oven, dip muffin top into butter, then roll in the cinnamon and sugar mixture. I have seen some people take the muffin cup off of the muffin and roll the entire thing in the sugar. I would recommend doing this, it looks like heaven!!
